Pictures or Posts which actually get seen?
Spent yesterday in the cellar racking many of the wines. It was windy out yesterday, I decided to stay in and get some inside work done. Craft wine making at its best, small scale. These are honey wines made with various wine grapes. Some classics like Cabernet Sauvignon, Merlot and Malbec (from the Yakama area). The ones right over my shoulder are made with Marechal Foch from Halsey, OR. This is an incredible grape that is more than happy to grow in our area, I'm beginning to get a little fruit from mine after just a couple years. I've found I like the Foch best, made with Raspberry Honey with untoasted oak. These craft wines are NOT the traditional sweet mead that might come to mind, but just off dry and the honey is fermented so only an essence of sweetness remains in the wine. They tend to be a little more friendly to new wine drinkers who are just developing the pallet for wine, as well are relatively gentle for people whose stomachs may need something to smooth out the edges of the acid found in wines.
