Bacon, Mushroom, Tarragon... Wine Pairing

Bacon, Mushroom, Tarragon

Oh my goodness!  I looked up a recipe today and improvised the heck out of it.  Still crazy good.

Recipe called for some kind of Italian bacon, used regular thick cut from Whites.
Recipe called for scallions, used green onions.  (but planted some scallions today).
Recipe called for a mix of wild mushroom, used single varietal from Freddy's.
Recipe called for Tarragon, planted and snipped some today.
Tossed in some Lemon Thyme and some garlic...

Improvise, improvise, improvise.
The fragrance and flavors were to die for.

Tasted to pair wines, Hard Knocks with herbs.  Apple Wine.  Pear Honey Wine.
Pear Honey Wine, not pictured, won out hands down.
Wow, too bad we were only able to make 16 or so gallons this year.
